home made Viking Sausages make this old favourite into a trendy modern
supper or wholesome tea for all the family to enjoy, without feeling guilty
thanks to this low fat version of chunky chips.
To enjoy this low fat version of home cooked chips, you don't even need
a chip pan. Just scrub your potatoes then cut into quarters or eighths,
depending on the size of the potatoes. Par boil for 10 minutes to soften
slightly, then place in a roasting tin and spray with olive oil/water
mist, freshly ground black pepper and a pinch or two of Maldon salt.
To infuse a herby flavour, why not rip a few springs of fresh rosemary
over the top? Then bake in a hot oven until crisp and golden for about
25 minutes.
If you're not calorie-conscious or want to give the kids a treat why not
do good old fashioned chips in dripping in the chip pan and served straight
from the paper like I did!
Meanwhile cook your Viking Sausages in a non-stick pan or under the grill
as preferred, turning frequently to ensure they become brown and crisp
on all sides.
Serve with home made mayonnaise and a Greek side salad.
